It's a North African savory pastry. The version I make has potatoes, preserved lemons, and harissa folded up with a raw egg and then pan fried so it cooks the egg just enough.
I honestly should have said burritos because I have an affinity for them but for some reason I was only thinking of food that I can make and my burritos are so sub-par compared to the ones I enjoy that I refuse to try again (it's probably because I don't secretly use lard when I cook for myself, but I'm scared to investigate).
That sounds incredible, share that recipe! This is the recipe I follow most closely (using Boaz's Filling). I originally learned it from working for an Algerian chef so I have a couple variations, like adding lemon juice. First off, saying this is AWESOME. I had the same experience in the early 2000's made many friends and shared alot of great music between us. And it was just a couple years ago, one of the administrators was able to gather a bunch of us up and make a group for us on Facebook where we all still talk.
